Pickles... Sassy and Saporiti

Ingredients

6 carrots cut in sticks

6 celery stalks cut in sticks

300 gr of cauliflower florets

300 gr of small pickling onions

2 cucumbers cut about 1/2 cm thick round

1 red bell pepper cut into strips

1 turnip roughly cut

1/2 bunch of dill

1 part white wine vinegar

1 part water

3 garlic cloves whole

1 garlic clove sliced

½ cup of salt

Extra white wine vinegar

Extra virgin olive oil

1 red chilli (optional)

Method

Place the water, vinegar, ½ of the salt and garlic in a large saucepan and bring to the boil and add all the ingredients, except the sliced garlic, the extra virgin olive oil the extra vinegar and the chilli. Blanch for about 10 minutes. Remove some of the water and save.


Strain the vegetables and let cool down. Place in a large recipient add the saved liquid, add the vinegar, the extra virgin olive oil, red chilli sliced on an angle (optional).


Check the seasoning, adjust accordingly.
